"I’m doing a rolled pork loin and planning on keeping it simple with salt and pepper on the fat, along with a little sweet rub. I will switch on the Joetisserie about 200°C until it hits about 65°C internal. For some great crackling, I may whack it up a little for 20 minutes at the end"
